Best of Bombay (Marks Gin and Tonic recipe)

This is not for the faint hearted or the non drinkers (or drivers) and I appoligise (I guess) that it is not responsible host friendly…! It is a world famous mix of mine and anyone that has had one will certainly say the same. The amount of people that have been converted to this recipe are many.

What you need….. 

600ml Glass (very important and size is king) thick glass is best
150ml Bombay Sapphire Gin (not any other Gin there is only one and the botanicals in the Bombay make this special)
300ml Dry Tonic (Schweppes) Don’t go budget on the tonic
Handful fresh Mint leaves
½ Lime – juiced
½ - 1 lemon – juiced then placed in glass pre wash lemon in very hot water
Muddling stick
 
Method 

Place the mint leaves in the bottom of the glass and using a muddling stick (if you don’t have one use a wooden spoon) bruise the mint and press into the bottom of the glass….do not pulverize. Add a good handful of ice cubes and stir….the oil in the mint leaves will stick to the ice…bonus!
Pour in ¾ of the gin (Bombay) and then the tonic to ¾ fill the glass…..add the squeeze of the lime juice and the remaining gin. Top up if required with tonic and squeeze the remaining lemon juice into the glass. Stir only once with a knife or something similar clockwise (doesn’t really matter but the A type personality insists on a clockwise turn. Do not over stir.
 
Drink and enjoy with friends that are not driving.
