An A-type personality, Mark is driven by his love for food and for great flavour. He has a fondness for fusion cooking, and his devotion to creating new taste experiences has led to some inspiring work with fruit! He loves combining its sweet and acid nature with other more savoury ingredients to create added dimension to a dish.

Understanding how flavour combinations work is key to building any dish, and Mark is the master. He has taken even the most simple of dishes and elevated it to a mouth-watering sensation by using the right combination of ingredients and cooking techniques. Experimenting, pushing boundaries, playing with the extremes of tastes – these are just some of the ploys Mark uses when creating his dishes.
